"Wow!" may well be your first reaction after entering Old San Juan's hippest and finest restaurant. Marmalade is rated the #1 reviewed restarant on tripadvisor out of 400 restaurants in San Juan. 

U.S.-born owner-chef Peter Schintler—who apprenticed with Raymond Blanc and Gordon Ramsay—has created a class act that's famous for its ultra-chic lounge bar. The restaurant's sensual and minimalist orange-and-white decor features high-back chairs and cushioned banquettes beneath recessed halogen lights. The menu uses many local, sustainable ingredients prepared California-French fashion, resulting in complex flavors and strong aromas. You might try Kobe beef cheeks with heirloom corn, chanterelles, and barley pilaf, or homemade black truffle tagliatelle with a marsala butter. Schintler also works wonders with vegetables, including the humble parsnip, which is roasted and served with blackberries, Marcona almonds, and an almond milk-rosemary foam. Diners can build their own four- to six-course tasting menu, with or without pairings from the very strong wine list, or order à la carte.
